You see, Bing CV carburetors don't actually have a choke. When you operate the "Choke" lever, what you are actually doing is rotating a disc-valve in the auxiliary carburetor. Took Apart and Cleaned the BING carbs. These are the 64/32/9 and 64/32/10 BING carburetors. They were standard issue on the R75/5 BMWs back in the early 70's. From what Siebenrock says, they will work just fine with their power/performance upgrade piston/cylinder kit.

Bing Carburetors - BMW R51/3 [R 51/3 1954]

Bing supplied a 26 mm slide carburetor for some early Airheads. The kit for them is 13 11 1 258 050. The very earliest /5 diaphragms were replaced by a thicker type, which is all that is available now from BMW. Some of those very early ones might still be around. There are a number of rubber O-rings used in the Bing CV carburetors.
